Whipped Miso Tofu Spread with Lemon Courgettes

This whipped miso tofu spread is a creamy, umami-rich alternative to traditional spreads, perfect for slathering on bread or serving as a dip. The base consists of tofu blended with white miso paste, offering a smooth texture that is both light and satisfying. To enhance the flavour, a splash of lemon juice is added, lending a refreshing tang that balances the richness of the miso.

Accompanying the spread are sautéed courgettes, seasoned with additional lemon juice and zest. The courgettes are cooked until tender yet maintain a slight bite, allowing their natural sweetness to shine through. Their bright, citrusy notes complement the miso tofu spread beautifully, creating a harmonious dish.

Ingredients:

  • 300g silken tofu

  • 1 teaspoon white miso paste

  • 2 tbsp extra virgin olive oil

  • 2 tbsp greek style yogurt (I use a soy based version of greek style - it creates tang!)

  • 1 tablespoon lemon juice (plus extra for courgettes)

  • Zest of 1 lemon

  • 2 medium courgettes, sliced

  • Olive oil for sautéing

  • Salt and pepper to taste

Method:

  1. Prepare the Whipped Miso Tofu Spread:

    • In a food processor, combine the silken tofu, white miso paste, lemon juice, and a pinch of salt. Blend until smooth and creamy.

    • Taste and adjust seasoning, adding more miso or lemon juice as desired.

  2. Cook the Courgettes:

    • Heat a drizzle of olive oil in a frying pan over medium heat.

    • Add the sliced courgettes and sauté for about 5 minutes, until tender but still crisp.

    • Stir in lemon juice and zest, and season with salt and pepper.

  3. Serve:

    • Spread the whipped miso tofu on crusty bread or serve with crackers.

    • Top with the sautéed lemon courgettes for a refreshing, flavourful bite.
