Simplified Vegan Shakshuka

Simplified and delicious one-pan shakshuka. Perfect for any meal of the day

Method

Thinly slice red onion and garlic, sauce with peppers in a pan. Add harissa paste and paprika, then cooked butter beans and chopped tomatoes.

Cook for 15 mins. 

Dress with finely chopped parsley, plant-based yoghurt, fresh mint, chilli flakes, olive oil, lemon juice and enjoy with sourdough olive bread, and avocado.

Recipe

2 tbsp rose harissa paste

1 tsp sweet smoked paprika

1 red bell pepper

2 red onions

2 x 400g butter beans

2 x 400g chopped tomatoes

Handful of fresh parsley

Handful of fresh mint

Chilli flakes

Plant based yogurt

Extra virgin olive oil

Serve with avocado and sourdough bread
