Orange Almond Vegan Cake

No complicated ingredients! always delicious

So I love cake, and this orange almond loaf cake is one of my favourites and so easy to make - no complicated ingredients!

Method

Preheat the oven to 180C and grease and line a cake tin with baking paper.

In a bowl combine rapeseed oil. sugar, almond milk and mix to combine. Pour in fresh orange juice then mix in orange zest.

In a separate bowl, Sift in the plain flour, baking powder, bicarbonate of soda, ground almonds and a pinch of salt.

Grease the cake tin and line the base with a disc of baking paper. Then, combine wet mixture with the dry gently until smooth.

Quickly spoon the cake mix into the prepared tin, spread level with the back of a spoon and bake on the middle shelf of the preheated oven for 40 minutes to 1 hour.

Leave the cake until completely cold before removing from the tin and serving.

200g plain flour
50g ground almonds
1 tsp baking soda
2 tsp baking powder
Pinch of salt
80ml rapeseed oil
150ml Califa almond milk
175g caster sugar
Juice from two oranges
Zest from one orange
1 tbsp vinegar
